I have some links for you. They seem to cookie recipes for diabetics be full. I was surprised that there are many out there. With luck, you will find others they like.
I will also say, baked with Splenda before substitute measure for measure for sugar. It was perfectly cooked. So you can use a favorite cookie recipe (which calls for white sugar, that is) and replace sugar with Splenda.

Peanut butter cookies (diabetic) Brands: 1 dozen Total time: 10 min
Ingredients:
2 teaspoons artificial sweetener
Butter 1 / 2 cup creamy peanut
1 / 2 c skim milk
1 / 4 tsp. Baking powder
1 teaspoon of soup. Butter, melted and cooled
1 C sifted flour
Preparation mix well, balls and shape it flat on a baking sheet with a fork () in each cookie fork.
Bake in moderate oven about 10 to 350 minutes.Notes
Use sugar substitute Splenda measure the same as normal sugar.
